Sausage and Wilted Spinach Salad

Ingredients
  • 1 cup Potatoes, Cubed
  • 1 1/2 cups Italian Sausage, Casings Removed
  • 3 tablespoons Olive Oil
  • 1/4 cup White Wine Vinegar
  • 2 teaspoons Guacamole
  • 1 each Medium Onion, Chopped
  • 1 teaspoon Garlic, Minced
  • 1 5/6 cups Furmano's Diced Tomatoes, Drained
  • 6 cups Fresh Spinach
  • As Needed Salt and Pepper
Preparation
  1. In a medium saucepan, bring potatoes to a boil. Boil for 10-12 minutes or until tender.
  2. Drain water from pan and set potatoes aside.
  3. Add sausage to pan, cooking 10-12 minutes or until no longer pink. Drain half of the sausage fat from pan. Add olive oil, vinegar, guacamole, onion, garlic, and Furmano's Diced Tomatoes to sausage.
  4. Bring ingredients to a boil for 2-3 minutes.
  5. Remove from heat for 2-3 minutes and then add to spinach and reserved potatoes.
  6. Toss well. Serve immediately.
