In a medium saucepan, bring potatoes to a boil. Boil for 10-12 minutes or until tender.
Drain water from pan and set potatoes aside.
Add sausage to pan, cooking 10-12 minutes or until no longer pink. Drain half of the sausage fat from pan. Add olive oil, vinegar, guacamole, onion, garlic, and Furmano's Diced Tomatoes to sausage.
Bring ingredients to a boil for 2-3 minutes.
Remove from heat for 2-3 minutes and then add to spinach and reserved potatoes.
