3 1/2 cups Furmano's Italian Style Diced Tomatoes with Basil, Garlic and Oregano, Drained
1 each Prepared Pizza Crust
2 1/2 cups Feta Cheese, Crumbled
12 ounces Roasted Red Peppers, Thinly Sliced
Preparation
Preheat oven to 375 degrees.
Slice eggplant into 1/2 inch thick slices and place in a Ziplock bag.
Add the olive oil, garlic, oregano, the salt and pepper. Shake to evenly coat the eggplant.
Pour out the contents of the eggplant bag onto a baking sheet.
Roast the eggplant in the preheated oven for 20 minutes or until tender.
Turn oven temperature up to 450 degrees.
Spread the Furmano's Italian Style Diced Tomatoes with Basil, Garlic and Oregano evenly over the prepared crust and sprinkle with 2 cups of feta cheese.
Arrange the roasted eggplant and the roasted peppers over the cheese.
Top with the remaining 1/2 cup of feta cheese.
Bake pizza for 12-15 minutes or until cheese is bubbly.
