Mediterranean Pasta

Ingredients
  • 2 tablespoons Olive Oil
  • 1 tablespoon Garlic, Minced
  • 5 cups Furmano's Italian Style Diced Tomatoes with Basil, Garlic & Oregano
  • 4 ounces Black Olives, Drained & Sliced
  • 1 tablespoon Dried Oregano
  • 1/2 cup Fresh Parsley, Chopped
  • 1/2 cup Dry White Wine
  • 1 pound Rotelle Pasta
  • 4 ounces Feta Cheese, Crumbled
Preparation
  1. Prepare pasta according to directions on box; drain.
  2. Meanwhile, warm the oil in a large saucepan over medium heat.
  3. Add the garlic; cook for 2 minutes.
  4. Add Furmano's Italian Style Diced Tomatoes with Basil, Garlic & Oregano, black olives, oregano and parsley; bring to just boiling. Reduce heat to low and simmer for 20 minutes.
  5. Add wine to tomato sauce; simmer 10 minutes more.
  6. Remove tomato sauce from heat and let cool slightly, about 5 minutes, to prevent cheese from melting immediately when tossed.
  7. In a large bowl, toss pasta, tomato sauce and feta cheese; serve immediately.
