Jamaica Me Crazzzy Saucy Chicken and Pineapple Rice

Ingredients
  • 3 1/2 cups Furmano's Petite Diced Tomatoes with Green Chilies
  • 2 cups Furmano's Black Beans, Rinsed & Drained
  • 1 1/4 pounds Pineapple Tidbits, Drained, Reserving Juice
  • 1 1/3 tablespoons Caribbean Jerk Seasoning
  • 1 teaspoon Ground Cumin
  • 1 cup Golden Raisins
  • 1/4 cup Mango Chutney
  • 6 each Boneless Skinless Chicken Breasts
  • As Needed Salt and Pepper
  • 6 cups Long-Grain Rice, Cooked With Reserved Pineapple Juice
  • 1/2 cup Green Onions, Thinly Sliced
Preparation
  1. Preheat oven to 350 degrees.
  2. Combine Furmano's Petite Diced Tomatoes with Green Chilies, Furmano's Black Beans, pineapple tidbits, Caribbean jerk seasoning, cumin, raisins and chutney in bowl, mixing well.
  3. Spray a 9"x13" baking dish with nonstick cooking spray. Place chicken in the baking dish and pour sauce mixture over top.
  4. Cover with foil and bake for about 25 minutes.
  5. Remove foil and continue to bake until chicken is tender and sauce has thickened, about 10-15 minutes.
  6. Adjust seasonings to taste with salt and pepper if desired.
  7. Divide rice among 6 warm plates, topping each with chicken and sauce.
  8. Sprinkle with green onions and serve.
