Baja Brunch Pizza



  • 1 pound Pork Breakfast Sausage, Loose
  • 3 1/2 cups Furmano's Petite Diced Tomatoes with Green Chilies, Drained
  • 6 each Green Onions, Sliced
  • 1/4 cup Black Olives, Sliced
  • 4 each Pizza Crusts, Small
  • 6 each Eggs, Lightly Beaten
  • 2 tablespoons Milk
  • 2 cups Cheddar Jack Cheese, Shredded
  • 1/4 cup Fresh Cilantro, Minced
  1. Preheat oven to 450 degrees.
  2. Slice the green onions and reserve the sliced dark green tops for a garnish.
  3. Crumble sausage in a large skillet, breaking up with a wooden spoon. Cook until cooked through, about 5 minutes, drain and return to pan.
  4. Add the Furmano's Petite Diced Tomatoes With Green Chilies, onions and olives. Spread onto pizza crusts.
  5. Beat the eggs and milk together and pour over sausage mixture. Spread over crust and sprinkle with cheese.
  6. Bake until eggs are just set & cheese is melted, 7 to 10 minutes. Sprinkle with green onion tops and cilantro.

Tip: Can substitute turkey sausage for the pork sausage for a healthier recipe.
