Green Chili Salsa - Topped Individual Chicken Meat Loaves

Ingredients
  • 2 pounds Ground Chicken
  • 1 cup Breadcrumbs
  • 1 each Yellow Onion, Finely Chopped
  • 1 teaspoon Garlic, Pressed
  • 2 each Eggs, Slightly Beaten
  • 2 teaspoons Salt
  • 1/2 teaspoon Black Pepper
  • 3 1/2 cups Furmano's Petite Diced Tomatoes with Green Chilies, Divided
  • 4 fluid ounces Milk
  • 1/3 cup Honey
  • 2 tablespoons Worcestershire Sauce
  • 1/3 cup Fresh Cilantro, Finely Chopped
Preparation
  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl combine ground chicken, breadcrumbs, onions, garlic, eggs, salt, pepper, 1/2 cup of Furmano's Diced Tomatoes with Green Peppers & Onions, and milk.
  3. Mix together and shape into 8 small loaves.
  4. Place loaves in single layer in a shallow casserole dish. Set aside.
  5. In a small mixing bowl combine remaining Furmano's Petite Diced Tomatoes with Green Chilies, honey and Worcestershire sauce. Pour mixture evenly over meat loaves.
  6. Bake in a preheated 350 degree oven for 40 minutes.
  7. Serve meat loaves warm with sauce from pan. Garnish with fresh cilantro, if desired.

Tip: Can substitute ground chicken with ground turkey if desired.
