Okra Gumbo

Ingredients
  • 4 cups Okra, Diced
  • 1 5/6 cups Furmano's Whole Peeled Tomatoes, Drained
  • 3 slices Bacon
  • 2 each Small Onions, Finely Chopped
  • 1 each Green Pepper, Finely Chopped
  • 1 clove Garlic, Minced
  • As Needed Salt and Pepper
Preparation
  1. Wash okra, cut crosswise and dice finely.
  2. Drain can of Furmano's Whole Peeled Tomatoes and chop fine.
  3. In skillet, fry bacon until crisp; remove bacon, drain and crumble.
  4. Put okra, onions, green pepper and garlic into skillet with drippings and cook until just tender.
  5. Add Furmano's Whole Peeled Tomatoes; cover and cook slowly about 30 minutes, stirring frequently.
  6. When done, season to taste with salt and pepper.
  7. Sprinkle with bacon and serve.

Tip: Delicious served over toast points or fluffy steamed rice or in a small bowl as an accompaniment to an entree.
