Grilled Summer Salad

Ingredients
  • 2 cups Green Leaf Lettuce, Torn
  • 1 pound Asparagus
  • 1 each Medium Yellow Squash, Sliced
  • 1 each Red Bell Pepper, Sliced
  • 1 each Yellow Bell Pepper, Sliced
  • 1 5/6 cups Furmanos Whole Peeled Tomatoes, Drained & Halved
  • 1/8 teaspoon Black Pepper
  • 1/2 teaspoon Salt
  • 2 tablespoons Olive Oil
  • As Needed Balsamic Vinegar Salad Dressing
Preparation
  1. Preheat BBQ grill.
  2. Remove rough ends from asparagus.
  3. Combine all vegetables except tomatoes in a dish and season with olive oil, salt and pepper.
  4. Place seasoned vegetables on grill and cook until tender.
  5. Remove vegetables from grill when done and chill.
  6. Layer chilled vegetables on lettuce and top with tomatoes.
  7. Top vegetables with salad dressing and serve.
