Meatless Jambalaya

Ingredients
  • 1 tablespoon Olive Oil
  • 1/2 cup Onion, Coarsely Chopped
  • 1/2 cup Green Bell Pepper, Coarsely Chopped
  • 1 teaspoon Garlic, Minced
  • 2 cups Water
  • 1 5/6 cups Furmano's Stewed Tomatoes
  • 1 cup Furmano's Tomato Sauce
  • 1/2 teaspoon Italian Seasoning
  • 1/4 teaspoon Cayenne Pepper
  • 1/8 teaspoon Fennel Seed, Crushed
  • 16 cups Uncooked Rice
  • 2 cups Furmano's Butter Beans, Rinsed
  • 2 cups Furmano's Kidney Beans
Preparation
  1. Heat oil in large skillet over medium-high heat until hot.
  2. Add onion, green pepper and garlic; cook and stir 2-3 minutes or until crisp-tender.
  3. Stir in water, Furmano's Stewed Tomatoes, Furmano's Tomato Sauce, Italian seasoning, cayenne pepper and fennel; bring to a boil.
  4. Add rice.
  5. Reduce heat to low, cover and simmer 25-35 minutes or until crisp-tender, stirring occasionally.
  6. Gently stir in Furmano's Butter Beans and Furmano's Kidney Beans.
  7. Cover, simmer an additional 5-10 minutes or until thoroughly heated, stirring occasionally.
