Fiery Black Bean Salsa

Ingredients
  • 1/4 cup Fresh Lime Juice
  • 1/3 cup Cilantro, Chopped
  • 6 each Scallions, Chopped
  • 2 tablespoons Olive Oil
  • 1 tablespoon White Vinegar
  • 4 1/2 ounces Green Chile Peppers, Chopped
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
  • 3 7/8 cups Black Beans, Rinsed & Drained
  • 1 1/2 cups Whole Kernel Golden Sweet Corn
  • 1 teaspoon Garlic Powder
  • 1 1/2 cups Red Onion, Chopped
  • As Needed Salt and Pepper
Preparation
  1. Whisk first eight ingredients in small bowl to blend.
  2. Place remaining ingredients in large bowl.
  3. Pour contents of small bowl over remaining ingredients, then season with salt and pepper.
  4. Mix well and chill at least 2 hours.
  5. Serve with tortilla chips.
