Ingredients
1 pound Vermicelli
2 tablespoons Olive Oil
1 each Small Sweet Onion, Finely Chopped
1 1/2 teaspoons Garlic, Crushed
3 1/2 cups
Furmano's Crushed Tomatoes
1/4 teaspoon Crushed Red Pepper Flakes
1/4 cup Water
1/4 cup Italian Parsley, Chopped
1/2 teaspoon Salt
1 pound Medium Raw Shrimp, Shelled
As Needed Parmesan Cheese
Preparation
Cook the Vermicelli in a large pot of boiling water until just done; about 9 minutes.
In a large frying pan, heat the oil over medium heat.
Add onion to the pan, stirring occasionally. Cook until translucent; about 5 minutes.
Add garlic; saute 30 more seconds.
Stir in Furmano's Crushed Tomatoes, red pepper flakes, water, Italian parsley, and salt.
Reduce heat to low; cover; simmer 15 minutes.
Add the shrimp; cover. Cook just until Shrimp are pink; about 4 - 5 minutes.
When vermicelli is done, drain the pasta and toss with tomato sauce and shrimp.
Serve sprinkled with Parmesan cheese and fresh garlic bread.
Tip:
For a different take on this recipe, you can add lobster in place of the shrimp.
