Vegetable Soup with Beets

Ingredients
  • 1/4 cup Olive Oil
  • 3 each Medium Carrots, Shredded
  • 1 each Large Potato, Diced
  • 1 each Medium Onion, Diced
  • 1/2 each Small Head Green Cabbage, Shredded
  • 8 cups Water
  • 1 5/6 cups Furmano's Diced Tomatoes
  • 1 pound Beets, Shredded
  • 3 each Beef Flavored Bouillon Cubes
  • 2 teaspoons Sugar
  • 1 1/2 teaspoons Salt
  • 1/4 teaspoon Pepper
  • As Needed Sour Cream (Optional)
Preparation
  1. In saucepan with olive oil, brown carrots, potato, onion and cabbage.
  2. Add water, Furmano's Diced Tomatoes, beets, beef bouillon, sugar, salt and pepper.
  3. Over high heat, heat until boiling.
  4. Reduce heat to low, cover and simmer for 30 minutes.
  5. Pour mixture into a blender and blend until smooth.
  6. Pour back into sauce pan and re-heat.
  7. Serve soup hot and garnish with sour cream (optional).
