Spanish Style Pork & Rice

Ingredients
  • 1 tablespoon Oil
  • 6 each Center Cut Pork Chops
  • 2 cups Onions, Chopped
  • 1 each Red Pepper, Seeded & Sliced
  • 1 each Green Pepper, Seeded & Sliced
  • 1 1/4 ounces Taco Seasoning
  • 1 liquid cup Water
  • 1 7/8 cups Furmano's Tomato Sauce
  • 1 cup Rice
  • 2 1/4 ounces Black Olives, Sliced
Preparation
  1. In large covered skillet, heat oil over medium heat.
  2. Brown chops on both sides, then remove chops from pan.
  3. Add onions and peppers; saute until golden.
  4. Stir in seasoning packet, water, and Furmano's Tomato Sauce.
  5. Add rice and mix well.
  6. Place chops on top of rice mixture and cover pan.
  7. Simmer over lowest temperature for 25 minutes.
  8. After 15 minutes, stir rice around to prevent sticking.
  9. Before serving, mix in the sliced black olives.
