Southwestern Omelet

Ingredients
  • 1 dozen Eggs
  • 3 1/2 cups Furmano's Petite Diced Tomatoes with Green Chilies
  • 2 cups Furmano's Black Beans, Drained & Rinsed
  • 1 each Avocado, Peeled, Pitted & Diced
  • 1/4 cup Red Onion, Diced
  • 1 cup Monterey Jack Cheese, Shredded
  • 1/4 cup Fresh Cilantro, Chopped
Preparation
  1. Slightly beat eggs, 2 at a time.
  2. Combine tomatoes, onion, avocado, black beans, cheese and cilantro.
  3. In 8-inch skillet with non-stick cooking spray, cook 2 beaten eggs until set and lightly browned.
  4. Spoon 1/6 mixture over cooked eggs before folding omelet.
  5. Garnish with additional cheese if desired.
