Potato Salad With A Twist

Ingredients
  • 6 each Medium Red Skin Potatoes (2 1/2 pounds), Cut In 1" Cubes
  • 3 1/2 cups Furmano's Diced Tomatoes
  • 2/3 cup Mayonnaise
  • 1/3 cup Feta Cheese
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Red Wine Vinegar
  • 1/2 cup Green Peppers, Diced
  • 1/2 cup Red Onion, Diced
  • 1/2 cup Celery, Sliced
  • 1/2 cup Ripe Olives, Drained & Sliced
  • As Needed Salad Greens
  • 2 tablespoons Pine Nuts
Preparation
  1. Cook potatoes in boiling salted water; drain and cool.
  2. Drain tomatoes; reserve 1/4 cup juice.
  3. In large bowl, blend reserved juice with mayonnaise, feta, mustard and vinegar.
  4. Add potatoes, tomatoes, peppers, onion, celery and olives; toss to coat evenly.
  5. Serve on salad greens; sprinkle with pine nuts.
