Ingredients
6 each Medium Red Skin Potatoes (2 1/2 pounds), Cut In 1" Cubes
3 1/2 cups
Furmano's Diced Tomatoes
2/3 cup Mayonnaise
1/3 cup Feta Cheese
2 tablespoons Dijon Mustard
2 tablespoons Red Wine Vinegar
1/2 cup Green Peppers, Diced
1/2 cup Red Onion, Diced
1/2 cup Celery, Sliced
1/2 cup Ripe Olives, Drained & Sliced
As Needed Salad Greens
2 tablespoons Pine Nuts
Preparation
Cook potatoes in boiling salted water; drain and cool.
Drain tomatoes; reserve 1/4 cup juice.
In large bowl, blend reserved juice with mayonnaise, feta, mustard and vinegar.
Add potatoes, tomatoes, peppers, onion, celery and olives; toss to coat evenly.
Serve on salad greens; sprinkle with pine nuts.
