Ingredients
1 pound Penne Pasta
1/4 cup Olive Oil
1 cup Carrots, Diced
1 cup Celery, Diced
1 cup Sweet Onion, Diced
1 teaspoon Salt
1 teaspoon Black Pepper
1/4 cup White Cooking Wine
1 5/6 cups
Furmano's Diced Tomatoes
2 tablespoons Fresh Basil
1 tablespoon Crushed Red Pepper Flakes
Preparation
Cook penne pasta in a large pot of boiling water.
Meanwhile, heat olive oil in a large pan. Add diced carrots, celery, and onions, then heat over medium heat until tender.
Add salt and pepper.
Deglaze pan with white wine; add can of Furmano's Diced Tomatoes with juice and stir.
Continue to simmer for ten minutes or until all ingredients have blended.
Pour mixture into a food processor; add fresh basil and crushed red pepper; (you may want omit the red pepper for small children).
Blend until mixture has a saucy texture.
Serve over cooked penne pasta.
Garnish with a sprig of basil.
