Ingredients
2 tablespoons Butter
2 cups Onion, Diced
1 cup Celery, Diced
1 cup Carrots, Diced
1 tablespoon Bay Seasoning
2 tablespoons Minced Garlic
1 cup Sherry
3 1/2 cups
Furmano's Petite Diced Tomatoes
1 cup Russet Potatoes, Diced
2 cups Beef Broth
1 pound Jumbo Lump Crab Meat
2 tablespoons Parsley, chopped
Preparation
In a large pot over medium heat, melt butter.
Add onions, carrots and celery. Saute until vegetables soften slightly.
Add garlic and bay seasoning. Saute for 2 minutes. Add sherry.
Next, add Furmano's Petite Diced Tomatoes, potatoes, beef broth and crab meat. Simmer for 20 minutes or until potatoes soften.
Top with chopped parsley when serving.
