Hacienda Party Bowls

Ingredients
  • 1 pound Ground Beef Chuck
  • 8 ounces Hot Ground Sausage
  • 1 each Large Onion, Chopped
  • 1 each Red Bell Pepper, Chopped
  • 2 tablespoons Taco Seasoning Mix
  • 3 1/2 cups Furmano's Petite Diced Tomatoes
  • As Needed Salt and Pepper
  • 1 cup Cheddar Cheese, Shredded
  • 1/2 cup Sour Cream
  • 1 each Avocado, Peeled, Seeded & Chopped
  • 2 each Plum Tomatoes, Seeded & Chopped
  • 5 each Waffle Bowls
Preparation
  1. Saute ground chuck and sausage in a large heavy skillet over medium heat until meat is browned, then drain.
  2. Add onion and bell pepper, saute together until vegetables are tender.
  3. Add seasoning, mix well, then add undrained Furmano's Petite Diced Tomatoes. Cook until hot and well blended and until most of the liquid has been absorbed, stirring frequently. Add salt and pepper, if desired.
  4. Divide hot beef mixture evenly among the waffle bowls and top immediately with cheese, then top each with a small dollop of sour cream, chopped avocado and plum tomatoes. Serve immediately.
  5. Garnished with fresh lime slices and fresh cilantro, if desired.

Tip: You can use the waffle bowls found in the ice cream section of the supermarket. Their slight sweetness accents the lively Mexican flavors in this very quick, delicious and colorful dish.
