Creamy Tomato Tortellini

Ingredients
  • 2 tablespoons Olive Oil
  • 1 1/2 teaspoons Garlic, Minced
  • 1 pint Chicken Broth
  • 3 1/2 cups Furmano's Petite Diced Tomatoes
  • 1 1/8 pound Tortellini
  • 1/4 teaspoon Cracked Pepper
  • 1/4 teaspoon Dill Weed
  • 1/8 teaspoon Baking Soda
  • 1 1/2 cups Whipping Cream
Preparation
  1. In a large, deep skillet, add olive oil and saute garlic.
  2. Stir in Furmano's Petite Diced Tomatoes and chicken broth; bring to simmer.
  3. Add tortellini; cook covered 5 minutes.
  4. Stir in pepper, dill and baking soda.
  5. Gently stir in cream. For a heavier sauce, stir 1 tablespoon cornstarch into whipping cream before adding cream to mixture.
  6. Return to simmer, stirring occasionally; sauce will thicken slightly.
  7. Serve in shallow bowls or rimmed plates.

Tip: For a seafood twist, add 1/2 pound cooked and shelled shrimp at the same time as you add the whipping cream.
