Charred Tomato, Chick Pea & Chorizo Salad



  • 1 pound Chorizo, Fresh & Thinly Sliced
  • 3 1/2 cups Furmano's Diced Tomatoes, Drained
  • 3 3/4 cups Furmano's Chick Peas, Drained & Rinsed
  • 7/8 cup Roasted Red Peppers, Chopped
  • 1 each Red Onion, Diced
  • 1 each Yellow Bell Pepper, Julienned
  • 1/2 cup Italian Parsley Leaves, Finely Chopped
  • 3 tablespoons Sherry Vinegar
  • 1/3 cup Extra Virgin Olive Oil
  • 2 teaspoons Honey Mustard
  1. Heat a nonstick skillet until hot. Add chorizo slices and flip until crisp and brown. Remove from skillet and place on paper towels to drain and cool.
  2. Place Furmano's Diced Tomatoes on baking sheet and place in 450 degree oven and let char slightly, about 11 minutes. Remove from oven and let cool.
  3. Place Furmanos' Chickpeas, red peppers, onion, bell pepper and parsley in salad bowl.
  4. Add cooled chorizo and charred tomatoes to bowl, toss lightly.
  5. Pour sherry vinegar, extra virgin olive oil, honey mustard, sugar, salt and pepper in carafe, cover and shake vigorously. Pour dressing over salad and lightly toss again. Serve.
