Black Beans & Rice

Ingredients
  • 4 each Onion, Chopped
  • 1 1/2 teaspoons Garlic, Minced
  • 2 tablespoons Olive Oil
  • 1 7/8 cups Furmano's Diced Tomatoes
  • 3 3/4 cups Furmano's Black Beans, Drained & Rinsed
  • 1/2 teaspoon Salt
  • As Needed Black Pepper
  • 1/2 teaspoon Cumin
  • 2 cups Cooked Brown Rice
  • 3 tablespoons Salsa
Preparation
  1. Cook chopped onion and minced garlic in olive oil in heavy skillet.
  2. Add seasonings and Furmano's Diced Tomatoes. Cook 5 to 8 minutes until onion is soft.
  3. Add Furmano's Black Beans and salsa. Simmer for 30 minutes.
  4. Add rice and continue cooking until rice is heated. Taste and adjust seasonings.
  5. Serve with green salad.
