Baja Border Bake



  • 1 pound Penne Pasta
  • 1 pound Lean Ground Beef
  • 1/2 cup Green Onions, Sliced
  • 1 teaspoon Garlic, Minced
  • 3 1/2 cups Furmano's Petite Diced Tomatoes with Green Chilies, Undrained
  • 1/2 cup Water
  • 2 cups Furmano's Black Beans, Drained & Rinsed
  • 1 cup Whole Kernel Corn, Frozen
  • 3 cups Mexican Blend Cheese, Shredded
  1. Allow frozen corn to thaw.
  2. Cook pasta according to package directions.
  3. Meanwhile, preheat oven to 350 degrees.
  4. In a large nonstick skillet, cook ground beef, onions and garlic until beef is cooked through, about 10 minutes.
  5. Stir in the Furmano's Diced Petite Tomatoes With Green Chilies, water, Furmano's Black Beans and corn, then mix with pasta.
  6. Spray or grease a 13x9x2 inch baking dish and layer half the pasta mixture in the dish, then top with half the cheese.
  7. Repeat layering, then bake, uncovered, until bubbling hot, 15 to 20 minutes.
