Yummy Chicken Tortilla Soup

Ingredients
  • 1 tablespoon Olive Oil
  • 1 each Onion, Chopped
  • 1 1/2 teaspoons Garlic, Minced
  • 2 teaspoons Chili Powder
  • 1 teaspoon Dried Oregano
  • 3 1/2 cups Furmano's Crushed Tomatoes
  • 10 1/2 ounces Condensed Chicken Broth
  • 1 1/4 cups Water
  • 1 cup Furmano's Whole Kernel Golden Sweet Corn, Cooked
  • 4 ounces Green Chilies, Chopped
  • 2 cups Furmano's Black Beans, Rinsed & Drained
  • 1/4 cup Fresh Cilantro, Chopped
  • 2 each Boneless Skinless Chicken Breasts, Cooked & Chopped
  • As Needed Tortilla Chips, Crushed
  • 1 each Avocado, Sliced
  • As Needed Monterey Jack Cheese, Shredded
  • As Needed Green Onions, Chopped
Preparation
  1. In a medium stockpot, heat oil over medium heat.
  2. Saute onion and garlic in oil until soft.
  3. Stir in chili powder, oregano, Furmano's Crushed Tomatoes, chicken broth, and water. Bring to a boil, and simmer for 5 to 10 minutes.
  4. Stir in corn, chilies, beans, cilantro, and chicken. Simmer for 10 minutes.
  5. Ladle soup into individual serving bowls and top with crushed tortilla chips, avocado slices, cheese, and chopped green onion.
