Ingredients
  • 4 each Zucchinis, Chopped
  • 2 each Onions, Chopped
  • 1 each Red Pepper, Diced
  • 1 each Green Pepper, Diced
  • 2 teaspoons Garlic, Minced
  • 1/4 cup Olive Oil
  • 7 cups Furmano's Italian Style Stewed Tomatoes, Chopped
  • 1 7/8 cups Furmano's Tomato Sauce
  • 1 7/8 cups Furmano's Kidney Beans, Drained & Rinsed
  • 2 cups Furmano's Black Beans, Drained & Rinsed
  • 1 each Jalapeno Pepper, Seeded & Chopped
  • 1/4 cup Fresh Cilantro, Minced
  • 1/4 cup Fresh Parsley, Minced
  • 2 tablespoons Chili Powder
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cumin
Preparation
  1. In a Dutch oven, saute zucchini, onion, red and green pepper and garlic in oil until tender.
  2. Stir in the Furmano's Italian Style Stewed Tomatoes, Furmano's Tomato Sauce, Furmano's Kidney Beans, Furmano's Black Beans, jalapeno pepper, and seasonings.
  3. Bring to boil over medium heat.
  4. Reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
