Tomato Macaroni Soup With Ham

Ingredients
  • 1 cup Elbow Macaroni, Dry
  • 1 each Ham Bone
  • 3 cups Water
  • 2 tablespoons Olive Oil
  • 1 cup Onion, Diced
  • 1 teaspoon Garlic
  • 1 cup Celery, Diced
  • 1 5/6 cups Furmano's Diced Tomatoes
  • 1 teaspoon Dried Oregano
  • 1 tablespoon Fresh Basil, chopped
  • 2 cups Ham, Diced
Preparation
  1. Cook the elbow macaroni according to package directions.
  2. Place ham bone in dutch oven and add 3 cups water. Cook for 1 hour.
  3. Remove bone from pot and trim off any meat.
  4. In saute pan, add olive oil, then saute onion, garlic and celery until soft but not brown.
  5. Add stock from ham bone along with Furmano's Diced Tomatoes, oregano, and basil; simmer 30 minutes.
  6. Add ham and cooked macaroni; heat through.
