Ingredients
  • 1 tablespoon Olive Oil
  • 1 pound Ground Turkey
  • 1 clove Garlic, Minced
  • 2 tablespoons Chili Powder
  • 1 teaspoon Cumin
  • 1/2 teaspoon Oregano
  • 3 1/2 cups Furmano's Diced Tomatoes with Green Pepper and Onion
  • 2 cups Furmano's Black Beans, Drained & Rinsed
  • 1 7/8 cups Furmano's Whole Kernel Golden Corn, Drained
  • 4 ounces Green Chilies, Chopped & Drained
  • 4 cups Tortilla Chips, Crushed
  • 2 cups Cheddar Cheese, Shredded
Preparation
  1. Preheat oven to 350 degrees.
  2. In a large skillet lightly oiled, brown ground turkey and minced garlic.
  3. Stir in chili powder, cumin, and oregano.
  4. Add Furmano's Diced Tomatoes with Green Pepper and Onion, Furmano's Black Beans, Furmano's Whole Kernel Golden Corn and green chilies.
  5. Bring to a boil, reduce heat and simmer 15 minutes.
  6. Cover the bottom of a 2-quart baking dish with 2 cups of chips. Layer with half the taco mixture. Sprinkle with half the cheese.
  7. Repeat these layers.
  8. Bake 15-20 minutes.
