Spicy Green Chili Chicken Salad

Ingredients
  • 3 cups Cooked Chicken, Cooled & Coarsely Chopped
  • 1 5/6 cups Furmano's Diced Tomatoes, Drained
  • 4 ounces Mild Green Chilies, Diced
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Lime Juice
  • 1/2 cup Red Onion, Diced
  • 1 each Jalapeno Pepper, Seeded & Finely Chopped
  • 2 tablespoons Cilantro, Finely Chopped
  • 1 teaspoon Garlic, Crushed
  • As Needed Salt and Pepper
  • 3 cups Iceburg Lettuce, Shredded
  • 1/2 cup Mexican Cheese Blend, Shredded
  • 2 each Avocados, Sliced
Preparation
  1. Combine all ingredients except lettuce, cheese and avocado. Chill until cold and ready to serve.
  2. Serve on a bed of shredded lettuce and sprinkle with Mexican cheese and avocado slices.
