Shrimp Santorini

Ingredients
  • 1 cup Brown Rice
  • 3 tablespoons Olive Oil
  • 2 teaspoons Unsalted Butter
  • 1/8 teaspoon Crushed Red Pepper Flakes
  • 1 1/2 pound Jumbo Shrimp, Deveined & Peeled
  • 3 1/2 cups Furmano's Diced Tomatoes
  • 1/4 cup Basil, Chopped
  • 1/4 cup Parsley, chopped
  • 1/2 teaspoon Orange Zest, Grated
  • 1/2 cup Feta Cheese, Crumbled
Preparation
  1. Prepare brown rice in small pot.
  2. In the meantime, place skillet over low heat, add olive oil, unsalted butter and red pepper flakes.
  3. Add shrimp, Furmano's Diced Tomatoes, basil, parsley, and orange zest.
  4. Cook until shrimp is cooked, about 2-3 minutes.
  5. Once tomato mixture is cooked, take off burner and mix in the feta cheese.
  6. Serve with brown rice.
