Nonna's Italian Pasta Fagioli Salad

Ingredients
  • As Needed SALAD
  • 3 7/8 cups Furmano's White (Cannelini) Kidney Beans, Drained
  • 2 cups Macaroni, Cooked & Drained
  • 1/4 cup Black Olives, Sliced
  • 1 5/6 cups Furmano's Italian Style Diced Tomatoes with Basil, Garlic & Oregano
  • 1/4 cup Celery, Chopped
  • 1/4 cup Green Pepper, Chopped
  • 2 tablespoons Onion, Minced
  • 2 tablespoons Parsley, Minced
  • 1/2 teaspoon Garlic Salt
  • As Needed Salt and Pepper
  • 1/4 cup Romano Cheese, Grated
  • As Needed
  • As Needed HERB DRESSING
  • 1/2 cup White Wine Vinegar
  • 1/2 cup Extra Virgin Olive Oil
  • 1/2 teaspoon Sugar
  • 1/2 teaspoon Salt
  • 1/4 cup Fresh Oregano, Chopped Fine
  • 1/4 cup Fresh Basil, Chopped Fine
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Crushed Red Pepper
Preparation
  1. In a large bowl, toss together all of the salad ingredients, except for the Romano cheese, and set aside.
  2. In a smaller bowl, whisk together dressing ingredients.
  3. Pour dressing over the salad and toss lightly.
  4. Chill salad for 1 hour.
  5. Before serving sprinkle with Romano cheese.
