Mike's Fool Proof Chili

Ingredients
  • 2 pounds Ground Chuck
  • 2 each Medium Onions, Diced
  • 3 7/8 cups Furmano's Black Beans, Rinsed & Drained
  • 1 7/8 cups Furmano's Red Kidney Beans, Rinsed & Drained
  • 3 1/2 cups Furmano's Crushed Tomatoes
  • 3 1/2 cups Furmano's Diced Tomatoes with Green Chilies, Undrained
  • 2 teaspoons Garlic, Minced
  • 3 each Medium Jalapenos, Diced
  • 1 each Medium Green Pepper, Diced
  • 1 1/2 pints Beer
  • 2 tablespoons Cumin
  • 2 teaspoons Paprika
  • 1 teaspoon Cayenne Pepper
Preparation
  1. Saute ground chuck until meat is brown (meat does not need to be done completely). Drain fat, then add onions.
  2. Saute onions until tender.
  3. Put everything in a large pot or slow cooker at low heat. Cook uncovered for 1 hour.
  4. Taste, and adjust as you see fit. If it's too spicy, add more beer. As far as the garlic and hot peppers go, feel free to change the amount to suit you.
  5. Cook for another hour and serve.
