Medite-Greek Salad

Ingredients
  • As Needed SALAD
  • 2 cups Uncooked Medium Shrimp, Peeled & Deveined
  • 1 each Head Romaine Lettuce, Shredded
  • 1 each Green Pepper, Chopped
  • 1/4 cup Red Onion, Sliced
  • 3 tablespoons Green Onion, Sliced
  • 1 each Cucumber, Chopped
  • 6 ounces Black Olives, Sliced
  • 1 5/6 cups Furmano's Diced Tomatoes, Drained
  • 14 ounces Artichoke Hearts, Drained & Quartered
  • 1 cup Pre-cooked Chicken Strips
  • 1 cup Feta Cheese, Crumbled
  • As Needed
  • As Needed DRESSING
  • 1/4 cup Olive Oil
  • 1/4 cup Balsamic Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Garlic, Minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • As Needed Salt and Pepper
Preparation
  1. On indoor or outdoor grill, grill shrimp for 5 minutes or until pink. Let cool.
  2. Place lettuce on serving dish. Top with remaining salad ingredients.
  3. For dressing, combine all ingredients in a tightly covered container. Shake well. Pour over salad.
