Furmano's Zucchini, Tomato & Potato Casserole

Ingredients
  • 2 each Zucchini, Thinly Sliced
  • 2 each Large Potatoes, Thinly Sliced
  • 3 1/2 cups Furmano's Italian Style Diced Tomatoes with Basil, Garlic & Oregano
  • As Needed Salt and Pepper
  • As Needed Olive Oil
  • As Needed Basil
Preparation
  1. Spray 9"x13" casserole dish with non-stick spray.
  2. Arrange as follows in alternating layers - layer of potato slices sprinkled with olive oil, salt & pepper; layer of Furmano's Italian Style Diced Tomatoes; layer of zucchini slices sprinkled with olive oil, salt & pepper.
  3. Repeat layers. Sprinkle top with basil.
  4. Bake at 400 degrees for 30-40 minutes.
