Friday Night's Shrimp, Beans & Rice

Ingredients
  • 2 cups Long Grain White Rice
  • 4 cups Water
  • 2 cups Furmano's Black Beans
  • 1 each Medium Onion, Diced
  • 1 teaspoon Garlic, Minced
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 pound Medium Shrimp, Peeled & Deveined
  • 2 teaspoons Adobo
  • 1/2 teaspoon Cumin
  • 1/2 cup Corona Beer
  • 3 1/2 cups Furmano's Petite Diced Tomatoes with Green Chilis
  • 1/4 cup Cilantro
  • As Needed Salt and Pepper
Preparation
  1. Cook rice in salted water as directed on package.
  2. Use fork to gently fold in beans during last 3-5 minutes of cooking.
  3. Meanwhile, in a 12" non-stick skillet, saute onions and garlic in oil over medium heat or 3-5 minutes or until onions become slightly translucent.
  4. Add shrimp, Adobo and cumin. Saute until shrimp just begins to curl.
  5. Remove skillet from heat and add beer and Furmano's Petite Diced Tomatoes with Green Chilis.
  6. Return to heat and simmer for 7-10 minutes, stirring frequently.
  7. Stir in cilantro and add salt and pepper to taste.
  8. Serve over cooked rice and beans.
