Enchiladas

Ingredients
  • 1 pound Ground Beef
  • 1 teaspoon Chili Powder
  • 1 teaspoon Garlic Powder
  • 1 5/6 cups Furmano's Diced Tomatoes
  • 1/4 cup Vegetable Oil
  • 6 each Corn Tortillas
  • 1 1/4 pounds Enchilada Sauce
  • 8 ounces Mexican Blend Cheese
Preparation
  1. Brown beef in skillet, drain.
  2. Stir in spices and tomatoes.
  3. Heat oil in separate skillet, then cook corn tortillas on both sides until slightly crispy.
  4. Heat enchilada sauce in pot.
  5. Dip tortillas in enchilada sauce.
  6. Place about 3 tablespoons beef mixture in each and roll up, placing in a baking dish.
  7. Cover all of the enchiladas with remaining enchilada sauce and cheese.
  8. Bake in 350 degree oven until melted.
