Easy Rice & Beans With Smoked Sausage

Ingredients
  • 2 slices Bacon
  • 4 ounces Smoked Sausage, Thinly Sliced
  • 1/2 cup Celery, Sliced
  • 1/2 cup Green Pepper, Diced
  • 1/4 cup Onion, Diced
  • 1 teaspoon Garlic, Minced
  • 1 teaspoon Thyme Leaves
  • 2 cups Furmano's Light Red Kidney Beans
  • 3 cups Long Grain Rice, Cooked
Preparation
  1. In large skillet, cook bacon until crisp and brown.
  2. Drain, reserving 2 tablespoons of drippings. Set bacon aside to cool; then crumble.
  3. In bacon drippings, cook sausage, celery, pepper and onion with garlic until onion is tender.
  4. Add remaining ingredients. Heat thoroughly. Serve over rice.
  5. Garnish with sliced green onion if desired.
