Easy Mexican Chicken Roll-Ups

Ingredients
  • 3 1/2 cups Furmano's Petite Diced Tomatoes with Green Chilis
  • 6 each Large Wheat Tortillas
  • 2 cups Chicken, Cooked & Shredded
  • 1 pound Refried Beans
  • 1 each Onion, Sliced
  • 1 each Green Pepper, Sliced
  • 1 clove Garlic, Chopped
  • 1 teaspoon Cumin
  • 1/2 teaspoon Chili Powder
  • 1/4 teaspoon Ground Clove
  • 1 cup Cheddar Cheese, Shredded
Preparation
  1. Saute onion, green pepper, and garlic until crisp and tender.
  2. Pour ½ can Furmano's Petite Diced Tomatoes with Green Chilis and Onions in a 9"x13" inch baking pan.
  3. Spread refried beans on each tortilla.
  4. Top each tortilla with chicken, vegetables, and half of the cheese.
  5. Roll up each tortilla and place in baking pan on top of tomatoes.
  6. Pour remaining tomatoes over tortillas.
  7. Sprinkle cheese over top of tomatoes.
  8. Bake for 30 minutes at 350 degrees.

Tip: Add 1/4 teaspoon cayenne or ground chipotle pepper to beans to spice things up! Or instead of using spices use 1/2 package of taco seasoning.
