Donovano's Chilled Gazpacho Soup

Ingredients
  • 3 1/2 cups Furmano's Diced Tomatoes
  • 1 1/2 pints Tomato Juice
  • 3/4 each Large Cucumbers, Peeled & De-Seeded & Finely Diced
  • 1/8 each Red Onion, Finely Diced
  • 1/4 each Red Bell Pepper, Finely Diced
  • 1/4 each Yellow Bell Pepper, Finely Diced
  • 1 clove Garlic, Minced
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Red Wine Vinegar
  • As Needed Fresh Parsley, Finely Minced
  • As Needed Fresh Cilantro, Finely Minced
Preparation
  1. Combine all ingredients in a large bowl or pot.
  2. Ladle approximately 1/3 of all ingredients into a food processor and puree.
  3. Combine pureed mixture with the rest of the ingredients.
  4. Garnish with fresh sour cream or guacamole if desired.
  5. Serve chilled.
