Cheese Tortellini With Tamarind Vegetable Sauce

Ingredients
  • 1 pound 4 Cheese Tortellini
  • 2 cups Frozen Supreme Vegetable Mix, Thawed & Drained
  • 1 3/4 pounds Furmano's Diced Tomatoes with Green Peppers and Onions
  • 3 cups Pizza Mix Cheese, Shredded
  • 1/3 cup Tamarind Sauce
  • 1 1/4 liquid cups Vegetable Broth
  • 8 each Eggs, Well Beaten
  • 1 teaspoon Italian Blend Dried Seasonings
Preparation
  1. Pre-heat oven to 350 degrees.
  2. Spray a non-stick vegetable or butter spray onto a 3-quart flat casserole dish.
  3. Cook tortellini according to package directions, drain well, stir in vegetables and pour into casserole dish.
  4. Drain Furmano's Diced Tomatoes with Green Peppers and Onions and reserve the juice.
  5. Evenly pour the tomatoes over the casserole.
  6. Sprinkle the cheeses evenly over the top of the casserole.
  7. To the reserved tomato juice, add the tamarind sauce, vegetable broth, eggs and the Italian seasoning. Mix well.
  8. Pour over the casserole and bake about 40 minutes or until the casserole is hot and bubbly and the top is lightly browned.
  9. Let set 10 minutes and serve.
