Black & White Bean Sauce Over Pasta

Ingredients
  • 4 slices Bacon, Chopped
  • 2 each Carrots, Coarsely Chopped
  • 1 each Onion, Chopped
  • 1 teaspoon Garlic, Minced
  • 3 1/2 cups Furmano's Italian Style Spaghetti Sauce
  • 2 cups Furmano's White Kidney Beans, Drained
  • 2 cups Furmano's Black Beans, Drained & Rinsed
  • 1/2 teaspoon Pepper
  • 2 cups Corkscrew Pasta, Cooked
  • 1/4 cup Parmesan Cheese, Grated
  • 2 tablespoons Fresh Parsley, Chopped
Preparation
  1. In 3 quart saucepan over medium heat, cook bacon until lightly browned.
  2. Add carrots, onion and garlic.
  3. Cook until bacon is crisp and vegetables are tender; spoon off fat.
  4. Stir in spaghetti sauce, beans and pepper.
  5. Reduce heat to low, cover and simmer 15 minutes, stirring often.
  6. Pour hot pasta onto serving platter.
  7. Add cheese and toss to coat.
  8. Top with bean mixture.
  9. Sprinkle with parsley.
